Palm Beach dining: Chefs get creative with Thanksgiving desserts - Palm Beach Post

When it comes to Thanksgiving desserts, pumpkins, apples and pecans loom large, but traditional pies aren’t their only destination.

Just consider the desserts Eau Palm Beach executive chef Zachary Detweiller has planned for the resort’s Thanksgiving buffets: Pumpkin, for instance, is the star ingredient in latte cups and ’`whoopie’’ confections.

“While we always have the very traditional Thanksgiving desserts on the buffet — including pumpkin pie and apple-cranberry cobbler — we’re noticing that our guests like to explore and try some of the more fun items, things they don’t see year after year, such as our pumpkin-flavored whoopie pies and hot chocolate cheesecake,” Detweiller said. “And making its debut this year is our apple-butter cr�me brulee, made with homemade apple butter — the flavors of fall in one dessert!”

Detweiller’s holiday desserts at Eau, 100 S. Ocean Blvd. in Manalapan, will be part of the resort’s Thanksgiving ballroom brunch buffet, 11 a.m. to 3 p.m., and a holiday ballroom dinner buffet, 5 to 7 p.m. (for more information, visit eaupalmbeach.com/dining/special-events).

Other apple-accented desserts Detweiller has planned for Thanksgiving include apple-almond strudel. As for pecans, look for chocolate pecan tartlets alongside such other treats as chocolate peanut-butter pie, chocolate hazelnut opera torte, sweet potato-ginger tiramisu, and salted caramel croissant pudding with rum Anglaise.

Elsewhere, creative Thanksgiving desserts will be featured at, among other places, Restaurant 44 at the Palm Beach Towers condominium, 44 Cocoanut Row. The restaurant will spotlight pies — apple, pumpkin and lemon-meringue — as part of its three-course Thanksgiving menu (visit restaurant44palmbeach.com for details), but it also will present at each table a complimentary tray of mini desserts. The assortment of mini desserts are set to include pumpkin truffles, raspberry cheesecake bars, apple-cranberry streusel bars, coconut macarons, pecan bars, eggnog truffles, mini gluten-free maple nut cake, and chocolate petit-fours.
